Key Baking Tips:

  1. Bake scone dough straight from the freezer without thawing.

  2. Place the frozen scones on a parchment-lined baking sheet. Space them apart for crisp edges.

  3. Brush the tops with a little milk, cream, or eggwash.

  4. Optional for sweet scones: add coarse sugar right before they go into the oven.

  5. Check for Doneness: Press gently on the top of a scone with the back of your finger or check if it feels firm. If the top indents or feels soft, give it another 3 to 5 minutes.

Notes:

  • Rotating halfway through baking time will ensure evenly baked.

  • Convection oven (fan-assisted): Lower the temperature by 25°F

Very Important:

Preheating your oven to the target temperature before baking takes 10 to 15 minutes

Why Preheating Matters

  • Proper Rise: Time-sensitive goods like cakes, cookies, and quick breads rely on an immediate burst of heat to activate baking powder and baking soda properly.

  • Even Texture: Waiting for the oven to finish its heating cycle prevents the top heating element from scorching or undercooking your food.

  • Consistent Browning: A hot cavity ensures the right caramelization and crisp crust.
